GLUTEN-FREE CORNBREAD PAIRS PERFECTLY WITH TEA

SERVE WITH TEA AND JAM FOR A DELICIOUS SNACK, WRITES AMY STOPNICKI

I like to always have home-baked options around the house — you never know when company might come.

I have been experimenting with some different gluten-free options, and

I'm so happy with the results of this cornbread. Served with tea and some raspberry jam, whether you eat gluten-free or not, it's delicious.

I hope you enjoy it as much as we did. GLUTEN-FREE CORNBREAD

INGREDIENTS

1 cup cornmeal 1 cup almond flour 1/2 cup honey 1/4 cup oil 1 egg 2 egg whites 1 tsp vanilla 1 tsp baking powder 1 tsp baking soda

INSTRUCTIONS

1. Preheat oven to 350 F. 2. Combine all ingredients together in a mixing bowl.

3. Pour into a parchment-lined loaf pan.

4. Bake for 45 to 55 minutes or until quite golden and cooked all the way through.
