SOLANGE BISTRO BRINGS FRENCH FOOD WITH A TWIST TO RIDGEWAY

As David Bergeron worked to open Solange Bistro in the heart of Ridgeway, he wanted to bring a new culinary experience to the area, giving people lots of opportunity to try dishes they've had before with unique twists.

"Our chef is Venezuelan and he's using French techniques to make changes to dishes that you normally have had," Bergeron said. "Like in our boeuf bourguignon we use short rib instead of chuck."

The French-inspired menu currently includes items like charcuterie, fresh oysters, truffle tagliatelle, and chicken cassoulet.

Bergeron encourages people to visit the restaurant occasionally throughout the year, giving guests the opportunity to sample a wide variety of an everchanging menu.

"Our menus will change seasonally so what you're eating today you might not have three weeks from now," he noted.

This isn't his first foray into the restaurant industry. Bergeron opened the Mexican eatery Casa Hugo on Erie Road in 2020.

Solange Bistro is named after Bergeron's mother, Solange Begin, who was also involved in the restaurant industry as waitress before she became a school teacher.

"He makes me so proud. Before we even started to talk about it he made me sign my name. That's my signature," said Begin.

His mother's signature, now found on all of the signs for the restaurant, isn't the only family touch Bergeron

is bringing to the space.

"I'm trying to grab some recipes from my aunts of what they were cooking in Quebec, bring them and change them up a little bit," he added.

For right now only the indoor portion of the restaurant is open. However, in the spring patrons will also be able to take advantage of a more relaxed patio space outside.

"That will be more of a lounge feel and more couches and lounge seating for sharing platters over there. You can sit out there before going in to have dinner," Bergeron explained.

Solange Bistro is only open for five days a week in the afternoon right now, but that will expand as more people visit the location during the summer months.
