WARM LENTIL SALAD
INGREDIENTS:
• 1 tbsp extra virgin olive oil, cold pressed
• 1/2 cup diced red onion
• 2 carrots, diced
• 2 stalks celery, diced
• 1 sweet red pepper, diced
• 1/4 tsp each of salt and freshly ground black pepper • 2 cans lentils, rinsed and drained
• 1/2 cup Mediterranean vinaigrette
• 1/2 cup chopped fresh parsley
STEPS:
In large saucepan, heat oil over medium-high heat; add onions, carrots, celery, red peppers, salt and pepper; cook for 5 minutes, stirring occasionally, or until soft. Stir in lentils; cook until heated through. Remove pan from heat. Stir in vinaigrette and parsley. Serve warm or at room temperature.
